We had a great night tonight with our close friends Angela and Nate! We got together to pick players for our Fantasy Football teams (yes, we already missed a game, we know!).
We ended up doing a potluck style dinner in phases…Brady and I did appetizers (crackers and a cool spread that was on sale at Vons!), then a bit later we served a great salad (romaine lettuce, avocado, walnuts, mozzarella, and balsamic vinaigrette). Nate and Ang brought corn to throw on the grill (and we added our Santa Fe Dry Rub to them to season). The bulk of our meal was the Brats and Beer, which were so delicious and easy to prepare! Here is what we did…
Ingredients:
1 package Brat sausages (if you have the choice, buy uncooked sausages as opposed to pre-cooked)
2 limes, cut in half
2 large sprigs fresh rosemary
3 cloves garlic, sliced
2 bay leaves
1 red onion, sliced
1 yellow onion, sliced
1 tablespoon dried oregano
1 teaspoon dried red pepper flakes
Salt and pepper, to taste
24-32 ounces of your favorite beer, plus an additional 3/4 cup beer (keep separate; to be used with onions)
Olive oil
Various mustards, for dipping (we love a Horseradish Mustard)
Buns are optional (we chose to forgo buns and just dip the sausages in condiments)
1 disposable aluminum tray (to put on the grill)
Directions:
1. Combine beer (enough to mostly cover sausages), rosemary, garlic, lime halves, bay leaves and sausages in the disposable aluminum tray.
2. Heat grill to high and place the aluminum tray over the heat. Turn heat down to medium-high and close bbq lid. Allow to boil for 15-20 minutes, flipping sausages every five minutes or so.
3. Meanwhile, saute onions, oregano, red pepper flakes, salt, and pepper in olive oil until browned. Add in 3/4 cup beer and allow it to condense. Keep onions warm.
4. Back to the grill… When most of the beer is gone remove sausages to the grill to give them a grilled crust on the outside.
5. Remove sausages from the grill and allow them to rest for 5 minutes to let juices settle. Then cut into 1-inch pieces and add them to onion/beer mixture (or if you will be using buns then put them in the onion mixture whole).
Serve with mustards for dipping or topping. Pile on the onions. Enjoy!
