We just finished eating a delicious, Sunday bbq lunch. I am just learning the ropes when it comes to grilling, so I was happy to practice with this today! These burgers are packed with flavor and…cheese! That’s right, there is cheese in the middle of each grilled patty. Delish!
Ingredients:
1.25 pounds ground turkey
2 tablespoons ricotta cheese
1/4 cup minced red bell pepper
1/4 cup chives, chopped
1/2 white onion, grated
1 tablespoon lime juice
1 tablespoon dried cilantro (or 3 tablespoons fresh cilantro)
1 teaspoon hot sauce
Salt and black pepper, to taste
8 slices fresh mozzarella cheese
4 slices sharp cheddar cheese
Avocado Mash (recipe follows)
Chipotle and Smoked Paprika Aioli (recipe follows)
Condiments: lettuce, pickle, tomato
4 whole wheat buns
Directions:
1. Combine turkey, ricotta, bell pepper, chives, grated onion, lime juice, cilantro, hot sauce, and salt and pepper to taste. Form into 8 patties of meat. Place sliced cheeses in on top of four of the patties and then place four remaining patties on top of cheese. Make sure to seal the edges of the burgers well. Chill in the refrigerator until you are ready to cook.
2. Heat grill to high. Place burgers on the grill and close lid. Cook for 10 minutes. Then flip burgers and cook for an additional 10 minutes, or until burgers are cooked through.
3. Briefly toast buns on grill.
To Serve: Spread Chipotle and Smoked Paprika Aioli on the bottom half of the bun. Then layer: burger, then pickle, then lettuce. On the top half of the bun spread a tablespoon of the Avocado Mash.
Avocado Mash
A delicious mixture of mashed avocado and freshly squeezed lemon, this recipe can be used on any burger or sandwich!
Ingredients:
2 avocados
2 tablespoons light sour cream
Pinch sea salt
1/4 teaspoon ground black pepper
1 tablespoon fresh lemon juice
Directions: Mash all ingredients together in a bowl. Chill until ready to use.
Chipotle and Smoked Paprika Aioli
This Aioli can be used for many things: a dipping sauce for french fries, a spread for a burger or sandwich, a seasoning in other recipes, etc. It is completly delicious and SO easy to make!
Ingredients:
2 cloves garlic, minced
1/4 teaspoon coarse salt
1/2 cup mayonnaise
1/4 teaspoon freshly ground white pepper
1 teaspoon smoked paprika
Juice of 1 lemon, plus 1/2 teaspoon zest
1 chipotle pepper, minced, plus 1 teaspoon adobo sauce (from the can)
1 teaspoon chili powder
1/2 teaspoon ground cumin
2 tablespoons Mexican beer of your choice (we used Dos Equis Amber)
Directions: Mix all ingredients together. Adjust seasoning to taste. Chill in the refrigerator for 1-2 hours prior to serving.
