This grilled corn is so great! Sprinkled with a little Santa Fe Dry Rub, this corn is then grilled and slathered in Cilantro-Lime butter. Can life get any better!?!
* Makes four ears of corn
Ingredients:
4 ears of fresh corn
1-2 teaspoons Santa Fe Dry Rub
Cilantro-Lime Butter (recipe follows)
Directions:
1. Remove silk threads from inside the corn husks. Soak corn with husks still on in cold water for 20 minutes.
2. Sprinkle kernels of corn with Santa Fe Dry Rub, then fold husks back up over corn.
3. Grill over medium heat for 15 minutes, then remove husks and lightly brown kernels over an open flame.
Serve with Cilantro-Lime Butter.
Cilantro-Lime Butter
Great on corn or other veggies!
Ingredients:
1 stick unsalted butter, softened
1/4 cup finely chopped cilantro leaves
2 tablespoons lime juice, plus 1/2 teaspoon lime zest
Pinch black pepper
Directions: Combine all ingredients in a food processor until mixed. Scoop onto plastic wrap and roll into a butter log. Place in the refrigerator for at least 1-2 hours before serving.
