Why not capture some of the last great days to barbecue today as you watch the game! These burgers have a variety of flavors ranging from tropical to savory. You will enjoy the clash of flavors betwen the red onion and the pineapple, the ham and the jalepeno.
* Makes four burgers.
Ingredients:
1 red onion, sliced, then sauteed until tender
4 sliced pineapple rings, grilled
1 1/4 pounds lean ground beef
1 bunch green onion, minced
3 tablespoons teriyaki sauce
1 tablespoon ricotta cheese
1 jalepeno, seeds removed, minced
2 cloves garlic, minced
4 slices mozzarella cheese
4 thick slices of cooked ham
1 egg
Salt and pepper, to taste
4 burger buns, split
Directions:
1. In a large bowl, combine meat, green onion, teriyaki sauce, ricotta cheese, jalapeno, garlic, egg, salt, and pepper. Mold mixture into 4 large patties with a pointer finger sized hole in the middle (like a small donut hole). Allow mixture to chill in refrigerator for 20-30 minutes.
- Note: Putting a hole in the burger patty will allow it to cook quicker and more evenly on the grill. Plus, the hole will mostly close while the patty is cooking and it makes NO difference in taste. Go ahead, make your grilling job a little easier!
2. Remove meat from refrigerator. Heat grill or grill pan to high heat, then place the patties on.
3. Cook for 5-6 minutes covered without flipping.
4. Lift lid and flip. Then top each patty with two slices of cooked ham then a slice of cheese. Cook and melt cheese (about 2-3 minutes), then remove burgers from the grill.
5. Put each burger on a bun and top with grilled pineapple and sauteed red onion.
Serve immediately.
