These sandwiches are easy to make and taste delicious. We served them at a Condo Association Board Meeting last summer during a dinner meeting at our place. They are fun to serve to a group of people because everyone can personalize their sandwich to their tastes. There are a lot of various sauces that you could use for spread: pesto, olive tapenade, sun-dried tomato spread, roasted red pepper spread, or hummus. Also tons of different veggies that you could roast and add to the sandwich: zucchini, squash, asparagus, eggplant, tomato, bell peppers, onion, etc.
* Makes four sandwiches
Ingredients:
8 slices sourdough bread
1 small zucchini, sliced and roasted
1 small yellow squash, sliced and roasted
1 red bell pepper, sliced and roasted
1 eggplant, sliced and roasted
8 slices provolone cheese
8 fresh basil leaves
2 tablespoons mayonnaise
Pesto, olive tapenade, or other spread
Directions:
1. Top 4 bread slices with mayonnaise, spread of choice, roasted veggies, basil leaves, and cheese.
2. Spray olive oil spray on the outside face of each piece of bread for grilling. Close with remaining bread and place on Panini grill; put lid of Panini grill down to put weight on the sandwich while it cooks.
3. Allow sandwiches to cook on medium-high for about 3-5 minutes per side.
4. Remove, slice on a diagonal, and serve.
TIP: If you do not have a panini grill, wrap a brick (or other heavy, flat and heat resistant item) in aluminum foil and place it on top of the sandwich while you cook it in a frying pan. Flip after a few minutes and continue cooking on medium-high until both sides of the sandwich are lightly browned.
