We aren’t big tequila drinkers but really happen to love the flavor it gives food. Honestly it is delish! This marinade will leave your meat/seafood moist and extremely flavorful. We’ve found that combining all of the ingredients in a resealable plastic bag and letting them sit together and combine for about an hour in the refrigerator prior to adding any meat/seafood really helps to mature the tastes. Then you can add the meat/seafood of your choice and begin the marinating process. You’ll definitely get better results this way. Check out our other Marinating Tips & Info.
Ingredients:
2 cups tequila
1 cup fresh lime juice
1 lemon, sliced
1 cup fresh cilantro
1 white onion, chopped
4 cloves garlic, crushed
1 chipotle pepper, minced
Salt and pepper, to taste
Directions: Combine all ingredients in a resealable plastic bag and soak meat of choice for 1-24 hours in the refrigerator. When you are ready to cook simply remove the meat from the bag. Do not reuse marinade.
Note: Depending on what you are cooking you will need to marinate for different amounts of time. So for example, you shouldn’t ever let shrimp or most fish soak in a marinade like this (with a lot of citrus and alcohol) for more than about an hour. The acidity of the ingredients will actually begin to cook the fish and/or shrimp. However, we will generally soak chicken and pork about the same length of time (about 24 hours max) and beef a little longer than both (about 24-48 hours max) .
