Oh how I love Monday night football. Last week was a “bye week” for the San Diego Chargers (our team) so it feels like it has been forever since we’ve seen them play. Tonight is the night! Bring it on Broncos!
For today’s Game Day recipe we decided to post an old appetizer recipe that we have used and eaten many times. This is one of my mom’s classics and it’s delicious! These bites of prepared polenta are pan fried on the stove, then covered with pesto and parmesan cheese, and baked. Getting a roll of prepared polenta makes this recipe a breeze to prepare. * This recipe will make 20-30 one-inch bites.
Ingredients:
1 roll polenta, sliced into ½” slices, then each slice cut into quarters (similar to a pie slice)
½ cup fresh pesto sauce (can be store-bought) **
½ cup shredded parmesan cheese
Olive oil
Directions:
1. Preheat oven to 375˚ F.
2. Sauté the bites of polenta over medium-high heat until browned and crisp, about 15-20 minutes.
3. Put polenta pieces in a glass baking dish. Top each with a small dollop of pesto sauce and some shredded parmesan cheese.
4. Bake until cheese melts, about 7-10 minutes.
** If you don’t feel like using pesto for these delicious appetizers, try using an olive tapenade and feta cheese crumbles instead. This combo is equally as good as the pesto and parmesan cheese! You could also try a sundried tomato mixture with mozzarella cheese. Yum!
